Apolipoprotein E (APOE) is a protein belonging to a more prominent family of fat-binding proteins called apolipoprotein. It is connected to fat metabolism and cardiovascular risk. One subtype of APOE is APOE4. There's a notion that possessing the APOE4 gene means you mustn't consume saturated fat, which worries people on carnivore & ketogenic diets.
