Lee Hull is a kidney patient. He's writing a book called STOPPING KIDNEY DISEASE. The book is pretty good. It has a great focus on prevention. He's got a great list of dietary AGE. AGE are proteins (& fats) that are bound covalently (strongly bonded) to glucose or other sugars. Dietary AGE comes mostly from seared meats. Plant sources and uncooked foods have few AGEs. Unfortunately, he doesn't mention the major source of AGE - hyperglycemia. HgA1c, the well-known marker of blood glucose levels over monthly periods - is actually an AGE.
